Bulghur Pilaf
Couscous based side dish

Soak 1 bag of cracked wheat (course) in 1/8 cup water, 1/8 cup olive oil.
Allow to soak for 10 minutes.
Simmer burgul in a frying pan using 1/4 stick of butter form 15 minutes, constantly stirring.
(See recipe with diced vegetables). Stir constantly.
Spice to desired taste.
You may also add curry, depending on flavor.
Place in casserol add chicken or beef stock and bake for 30 minutes.
Serve hot.

About ¼ cup Sultan brand Extra Virgin olive oil
2 onions, finely chopped
2 cups bulghur wheat
4 cups hot chicken or vegetables
2-3 fresh mint or flat leaf palet
3-4 dried apricots, sliced
3 tablespoons pine nuts, toast
salt and ground pepper
1 fresh mint sprig, to garnish
