Directions

Fattoush SaladPreheat the oven to 350 F.

Split the bread into two through the centre and bake on a baking tray for about 8 minutes, or until golden and crisp, turning halfway through.

Break into small pieces. For the dressing, whisk all the ingredients together in a bowl until combined.

Place the bread pieces and remaining salad ingredients in a bowl and toss. Pour on the dressing and toss well.

Season, to taste, with salt and ground black pepper.

Serve immediately.

6 cups lettuce leaves, shredded

1 large cucumber, cut into 1/2 inch cubes

4 ripe tomatoes cut into 1/2 inch cubes

8 spring onions, chopped

4 tablespoons chopped fresh flat-leaf parsley

1 tablespoon chopped fresh mint

2 tablespoons chopped fresh coriander

2 cloves garlic, crushed

3 ½ fl oz Sultan Brand extra virgin olive oil

3 ½ fl oz Ziyad Brand lemon juice
