Freekeh (pronounced Free-ka) is made by fire roasting baby green wheat, It has a nutty, crunchy taste and is used as a side dish (replacement for rice) or as an added ingredient in salads and soup for punch.
Pick through the freekeh looking for any small kernels or foreign objects. Wash thoroughly.
Place all ingredients into a pot and boil for 10 minutes stirring occasionally. Reduce to simmer and cover until Freekeh absorbs all liquid.
You can add more or less water to determine prefered consistency.
Let sit for 10 minutes when done.
You can also dice vegetables or add herbs and spices to your taste.
