Wash hands thoroughly.
Place flour in a bowl and push down with fist to create a "bowl" in center.
Add salt and water slowly as you steadily knead the dough into a smooth consistency.
Place 1/4 cup of olive oil in a second bowl and use it to cover the plams of your hands.
Grab chunks of the dough and roll the dough in your oiled hands to form round balls about 2 1/2 inches in diameter (small fruit size).
Let dough sit for 30 minutes. (You can cover with a damp towel to retain moisture.)
Take one ball of dough and place on a kneading board or marble top and flatten widely (up to six inches in diameter).
Then fold in each side to create a square.
The preferred size is about 4 inches wide.
Brown each patty in a buttered pan.
Serve with honey, syrup, sugar as a side snack with breakfast or tea.
Option: Stuff before folding with a preferred mixture of ground lamb, almonds, sugar, onions, parsley, and spices.
